Rice in the microwave of an earlier post has now given rise to a casserole dish that is quick and easy:
Rice with Fish and Veggies Casserole
2 cups water
1 cup rice or 2/3 cup Basmati rice
bouillon or soup base. I used 2 tsp beef base and ½ tsp chicken base
Single serve filet fish (not breaded; like from the Kroger), fresh or thawed
bite-sized veggies of your choice
- In a 1-quart microwavable bowl with lid, put 2 cups water and bouillon or soup base of choice. Microwave on high 2 minutes. Stir till bouillon or base dissolves.
- Add rice to water and microwave on high for 10 minutes.
- Add veggies. Place fish portion on top of rice and veggies.
- Microwave for 7-9 minutes, till the fish is done.
- let cool and eat.
