 Rice in the microwave of an earlier post has now given rise to a casserole dish that is quick and easy:

Rice with Fish and Veggies Casserole

 

2 cups water

1 cup rice or 2/3 cup Basmati rice

bouillon or soup base. I used 2 tsp beef base and ½ tsp chicken base

Single serve filet fish (not breaded; like from the Kroger), fresh or thawed

bite-sized veggies of your choice

 

  1. In a 1-quart microwavable bowl with lid, put 2 cups water and bouillon or soup base of choice. Microwave on high 2 minutes. Stir till bouillon or base dissolves.
  2. Add rice to water and microwave on high for 10 minutes.
  3. Add veggies. Place fish portion on top of rice and veggies.
  4. Microwave for 7-9 minutes, till the fish is done.
  5. let cool and eat.
